Turkey And Bean Chili
This makes several proper meals, freezes well, and tastes even better the next day. In other words, it rewards planning without requiring much of it.
Ingredients
Makes 4 servings.

| Lean ground turkey | 600 g |
| Kidney beans, drained | 1 can / about 240 g |
| Black beans, drained | 1 can / about 240 g |
| Chopped tomatoes | 2 × 400 g cans |
| Onion, diced | 1 large |
| Red bell pepper, diced | 1 large |
| Olive oil | 1 tablespoon |
| Tomato paste | 2 tablespoons |
| Ground cumin | 2 teaspoons |
| Smoked paprika | 2 teaspoons |
| Chili powder | 1–2 teaspoons |
| Salt and pepper | To taste |
Preparation
- Heat the oil in a large pot and soften the onion and pepper for 5 minutes.
- Add the turkey and cook until browned, breaking it apart with a spoon.
- Stir in the tomato paste and spices, then add the tomatoes and beans.
- Simmer uncovered for 25–35 minutes, stirring occasionally. Add a little water if it becomes too thick.
- Taste, adjust the seasoning, and serve. Rice, yogurt, avocado, or none of the above are all legitimate choices.
