Salmon And Sweet Potato Tray Bake
One tray, very little ceremony, and a meal that looks considerably more organized than the person who made it.
Ingredients

| Salmon fillets | 2 × 150 g |
| Sweet potato, cubed | 400 g |
| Broccoli florets | 250 g |
| Olive oil | 1 tablespoon |
| Dijon mustard | 1 tablespoon |
| Lemon | 1 |
| Garlic, minced | 2 cloves |
| Smoked paprika | 1/2 teaspoon |
| Salt and pepper | To taste |
Preparation
- Heat the oven to 210°C.
- Toss the sweet potato with half the oil, paprika, salt, and pepper. Roast for 20 minutes.
- Add the broccoli to the tray. Place the salmon alongside it.
- Mix the remaining oil with the mustard, garlic, lemon zest, and a squeeze of lemon juice. Brush it over the salmon.
- Roast for another 12–15 minutes, until the salmon is cooked to your liking and the vegetables are tender.
